Valentine's NOTD and Cupcakes

Thursday, February 14, 2013

Since I don't have that special someone in my life, I decided to spent this day spoiling myself. First I tried to do a Valentine's day inspired Caviar manicure and then treat myself and my family with some Strawberry cupcakes.
Here are the final results:

MUA nail varnish in Plum Noir and Nail constellation in Leo, Depend Panthenol strengthener,
Essence better than gel nails top sealer

This was my first attempt at doing the Caviar manicure and I tried to shape a heart on my second finger.

 Strawberry cupcakes

Strawberry cupcakes

For 20 muffins:
1 teaspoon of Baking powder
1 teaspoon of Vanilla sugar
300g of all-purpose flour
150g of brown sugar
1 egg
100g of unsalted butter
300ml of milk
50g of mini chocolate chips
300g of strawberries

In a large bowl mix all of the dry ingredients and in a separate bowl, melt the butter, add milk and the egg. Gently mix this together and add in the bowl with the dry ingredients. Mix all together, but do not overmix. It shouldn't be too liquidity but it should be soft.
Add the strawberries and chocolate chips, gently mix those two ingredients with the rest.
I preheat my oven to 200-220°C and I bake them for about 15 minutes. Then they need to cool and in the meantime I prepare the frosting.

Frosting:
250g of Mascarpone cheese
½  L of Whipping cream
1-2 tablespoons of strawberry jam

You can use less everything if you want to have less frosting or if you have less muffins. You can also use less/more of jam (it doesn't have to be a strawberry one), the more jam you add, the more colour the frosting will have and the sweeter it will be. Mine looks white because I didn't have enough jam.
Then you mix all this together and out it in the fridge for about 20 minutes.
At the end, decorate the muffins as you wish.

    1. Thank you and no, it's not. The ones that I had on my right hand started to peel of the next day, you can easily remove them :)
I was a little bit disappointed because I though that it would last longer, maaybe I should try with another coat of top polish or with avoiding contact with water :D
